Chicken & Broccolini Laksa

Ingredients
- 1g olive oil spray
- 1 tablespoon laksa paste
- 2 cups chicken stock
- 1 can light coconut-flavoured evaporated milk
- 200g raw, lean chicken breast, thinly sliced
- 1 bunch broccolini
- 120g bean shoot
- 1/4 bunch mint
- 1/4 bunch fresh coriander
- 1 medium lime, cut into wedges to serve
Method
Spray the base of a large saucepan with olive oil and heat over medium heat. Add the laksa paste and cook, stirring, for 1-2 minutes or until fragrant.
Add the chicken stock and coconut-flavoured milk and stir to combine. Bring to a very gentle simmer over medium heat. Add the chicken and broccolini stems (cut any thicker stems in half lengthways). Cook for 5 minutes, add the broccolini florets in the last 2 minutes and simmer until the chicken is cooked through and the broccolini is tender.
Divide the laksa mixture between the bowls. Top with the bean sprouts, mint and coriander. Serve with the lime cheeks.
