5 Easy Things to Make in the Microwave

Have you ever been so focused on the demands of everyday life that you forget to drink your now cold coffee, or maybe it’s slipped your mind to put the frozen chicken in the fridge to defrost for dinner? This happens to all of us, and to that we have more than likely said, “I’ll just pop it in the microwave”.

The microwave is a great tool to save us from the challenges of a busy life and it also helps us prepare nutritious food to support our wellbeing. In gratitude for the trusty microwave, below are 5 easy things that can be made easier in the microwave in minutes.

  1. Eggs!

Eggs are pretty tough to beat when it comes to nutrition. They are packed with quality protein and 13 essential vitamins and minerals. Luckily, eggs are easy to cook, and even easier in your microwave.

For scrambled eggs – Combine your eggs with a splash of milk and salt to taste (optional) in a microwave safe bowl. Heat for 30 seconds at a time, stirring and scraping down the sides for fluffy eggs. Cook for a total of two minutes.

For poached eggs – crack an egg into a microwave safe bowl filled with water and a splash of white vinegar. Cook in 30 second increments for about one minute or until the white of the egg just turns opaque.

  1. Potato

The microwave is a fast and easy way to cook and steam vegetables. For potatoes, after first washing and drying the potato, pierce it all over with a fork. Cook the potato whole in the microwave for 3-4 minutes, flip the potato, then cook for an extra 3 minutes. Alternatively, you can place chopped potatoes in a microwave safe bowl with a lid or use a “steam” container, just like we did for our sweet potato in our delicious poke bowl.

  1. Porridge

Combine oats with water (enough so the oats are all wet) in a microwave safe bowl. Microwave for 90 seconds then add cinnamon and honey and stir. Top with your favourite fruits and a splash of milk for a nutritious, quick and delicious breakfast.

  1. Rice

Fill a microwave safe container with 1 cup washed rice and 2 ¼ cup water, then cover with the lid. Microwave on high for 5 minutes at full power or for 15 minutes at 50% power. If you find you want your rice even quicker, you can purchase microwave rice cups at the store that can be cooked in 40 seconds!

  1. Dessert

The microwave can be used for various desserts. If you don’t already melt your chocolate in the microwave for baking, you should! It is quick, easy and only requires one microwave safe bowl. Be sure to zap it in 30 second increments and stir so the chocolate does not burn!
