Winter Warmer – Little Tuna Family Fish Pie

Looking to boost your daily protein intake without gulping down a protein shake or eating truckloads of chicken? Try this delicious Winter warmer recipe that will please the whole family AND provide up to 30% of your daily protein intake.

Little Tuna Fish Pie
Ingredients
Potato Topping

1 kg Potatoes, mashing variety, peeled and quartered

60 ml Reduced fat milk

60 gm Extra light cream cheese

2 Egg yolks

20 gm Cheddar (3 tablespoons)

10 gm Parmesan (2 tablespoons), finely grated

Salt to taste

Pepper to taste

Fish Pie Filling

2 x jars Little Tuna Lemon Myrtle, drained and chopped

200 gm raw peeled prawns

1 Onion, finely diced

1 large Carrot (170 gm), finely diced

200 gm Extra light cream cheese (cooking variety)

200 ml Reduced Fat milk

100 gm Cheddar cheese, grated

3 large handfuls Baby Spinach (100 gm), chopped

1 teaspoon Olive oil

1 teaspoon Garlic, minced

2 x teaspoons mild mustard

3/4 cup Parsley (12gm), chopped

Salt to taste

Pepper to taste

 

Suggested Side- Steamed broccoli or side salad

Suggested bake ware- 2L capacity dish

Method
  1. Preheat the oven to 210°C
  2. Put potatoes into a large saucepan, cover with water and bring to the boil. Once boiling, reduce the heat to allow a simmer for 20 minutes, or until soft.
  3. In a separate large pan, gently sauté the onion and carrot in a little olive oil for 5 minutes or until soft. Mix in the mustard, garlic, milk and cream cheese. Simmer gently for 6-8 minutes or until it thickens. Remove from the heat and stir through cheddar cheese, baby spinach and parsley. Season well with salt and pepper. Set aside.
  4. Drain the potatoes and mash well. Add in milk, cream cheese and then when cooled slightly fold through the egg yolks. Season with salt and pepper and set aside.
  5. On the base of a 2L capacity baking dish, evenly place small chunks of the Little Tuna and the raw prawns.
  6. Carefully pour the creamy vegetable sauce over the tuna and prawn mix.
  7. Spoon the potato topping to form a layer on top of the fish and sauce mix. Carefully fork the mixture to spread it out. Sprinkle with cheddar and parmesan.
  8. Place dish on the middle shelf of the oven for 30 minutes, or until topping is golden brown.
  9. Serve with steamed broccoli or a fresh side salad. Enjoy!
